Stewing Beef
Stewing Beef — a mix of trimmings or smaller pieces from quality chuck tender beef. It’s a bit more variable in cut than braising beef, often containing more connective tissue and fat so it needs longer, slower cooking to tenderise fully, but gives you a really deep, beefy flavour. Perfect for comforting casseroles, hearty stews, or a warming homemade curry.
Cooking: For best results, brown the stewing beef in a little oil over a medium heat to seal in the flavour. Add to a casserole dish with stock, vegetables, and your choice of herbs or seasonings. Cover and cook slowly until tender — around 2 to 2½ hours in the oven at 160°C / 325°F / Gas Mark 3, or simmer gently on the hob for a similar time. This cut becomes meltingly tender when cooked low and slow.
