This delicious thin pancake recipe can of course be used to make our favourite traditional pancakes, often served with sugar and lemon toppings but for a savoury and sweet twist why not try this Dutch version by adding some saltly bacon, grated cheese and a drizzle of honey or Maple syrup.

Yield: 8, 8-inch pannenkoek
Ingredients
- 250g all-purpose flour
- 500ml milk
- 2 eggs
- 1/4 tsp salt
- butter for cooking
- Honey/Maple syrup for serving
Directions
- In a medium bowl, combine flour and salt. Set aside.
- In a measuring cup combine the milk and eggs. Add half the liquid to the dry ingredients and whisk thoroughly until you form a smooth, non-lumpy paste.
- Add the remaining milk-egg mixture and whisk until the batter is smooth and evenly mixed.
- Prep your chosen toppings before heating the pan.
- Heat a non-stick pan with 2 tsp of butter over medium heat until the butter melts.
- Pour about 1/4 cup to 1/3 cup of batter into the centre of the pan. Pick up and tilt the pan so the batter evenly covers the bottom.
- Allow the batter to cook and set before flipping it over.
- Add your toppings, bacon, cheese etc
- Place in a warm oven until ready to serve.
- Serve with a drizzle of honey or maple syrup.
