Ingredients (serves 2):

6 chicken drumsticks

1½ tbsp olive oil

1 clove garlic, crushed

1½ tbsp soy sauce
-
1½ tbsp honey
-
1 tbsp tomato ketchup (or chilli sauce for a kick)

½ tsp smoked paprika
-
Juice of ¼ lemon (or lime)

Salt and pepper, to taste

Fresh herbs or sesame seeds, for garnish (optional)
Method:

Prepare the drumsticks:
Using a sharp knife, cut around the thin end of each drumstick and push the meat down towards the thicker end to create a “lollipop” shape. Trim off any loose tendons. -
Make the marinade:
In a bowl, mix the olive oil, garlic, soy sauce, honey, ketchup, paprika, lemon juice, salt, and pepper. -
Marinate:
Coat the chicken well and refrigerate for at least 1 hour, or overnight if you have time. -
Cook:

Oven: Preheat to 200°C / 400°F / Gas 6. Place on a lined baking tray and roast for 30 minutes, turning halfway through, until golden and cooked through.

BBQ: Grill over medium heat for 20–25 minutes, turning regularly until lightly charred and the juices run clear.

Serve:
Brush with any leftover glaze from the pan and sprinkle with herbs or sesame seeds if you like.
