1 Pork Belly
Half Lemon
Olive Oil
Paprika

3-4 Roasting Potatoes
Directions
Preheat oven to 160ºC.
• Score around the bones on the underside of the pork belly and deeply score the skin.
• Cut the potatoes in half lengthways and form a trivet wit in the roasting pan. Rest the pork belly on the potatoes skin side up.
• Squeeze the juice of half a lemon over the skin and rub in. Drizzle olive oil over the skin and rub in.
• Mix 1 part paprika to 1 part salt and rub into the skin to fully cover.
• Pour water into the bottom of roasting pan (approx 2 cm deep).
• Cover pork with baking paper and cover the roasting dish/pan with silver foil to form a seal.
• Place in the middle of the oven for 4 hours at 160ºC.
• Remove all coverings and return to oven at 180ºC for 1 hour.
• Serve with fresh vegetables.
